The Cajun influence stems from French refugees from Canada who, in the eighteenth century, made their homes on the bayous - the interlacing waterways of the swamp country that lies to the west of the Mississippi. Chicken was the most common item on the menu in the early days of New Orleans, and this recipe carries the name of the first Frenchman to reach the mouth of the Mississippi: Monsieur Bienville
